Hubert Chiron reveals the secrets of the croissant at the 51st Congress of the Compagnons du Devoir
At each edition, the Congress of the Compagnons du Devoir and du Tour de France des métiers du goût brings together bakers, pastry chefs, but also pork butchers, winemakers and soon cheese makers. This 51st edition took place from June 1st to 3rd in Tours. Hubert Chiron, President of AIPF, unveiled at a conference, the secrets of this inimitable pastry … and very French; sharing the story and recipe of the croissant in the shape and taste we know. The croissant became a firm favourite in Paris a little more than a century ago, before conquering the whole country.
